Washed rind, bloomy rind, fresh, blue…so many choices, but don’t let that daunting cheese counter in the store intimidate you! We will teach you how to navigate the seven categories of cheese, so that you will leave confident in choosing, storing and serving cheese. There are so many wonderful cheeses from around the world, but of course we have to start with our favorite – Italian! Course fee includes $10 for a cheese tasting.

 

From the beginning, Rynn Caputo knew she wanted to share her knowledge of traditional, cultured, Italian cheese with the world. She has led Caputo Brothers Creamery’s rapid growth from a small creamery in their home to a state-of-the-art facility with nationwide distribution. With a goal to revolutionize the mozzarella industry, she continues to educate consumers on her no vinegar, no citric acid philosophy and the downfalls of industrial cheese. Her area of expertise ranges from fermentation and cheesemaking techniques to entrepreneurship and running a small business.
